Ingredients for Kerman Zireh Polo

Beef or mutton: 500 g
Chicken: 1 kg
Rice: 4 cups
Bay laurel: 2 pcs
Onions: 2 to 3 pieces
Saffron : as needed
Tomato paste: 2 tbsp
Black cumin: 2 tbsp
Paprika and curry spices: as needed
Cinnamon: As needed
Salt, pepper and turmeric: as needed

How to prepare Kerman Zireh Polo

Wash the rice and soak it in a little water and salt for 2 hours. Then bring the pot of half water, and put it on the heat until the water boils.

Then drain the rice of water and pour some oil in boiling water and reduce the flame, close the pot and let the rice cook for 15 minutes and their kernels become soft.

Pour a glass of water and oil into the pot and drain the rice.

Taste the rice salt and pour it into the pot and put cumin on the side and pour a glass of water and oil on it.

Close the pot tightly and put it on a gentle heat to steam the rice. Then put it in a saucepan and reduce the heat to simmer the rice.

Kermani Zireh Polois a part of local food of Kerman. Preparation time of raw materials and supplies is about 15 minutes.  And the cooking time and waiting time is about 2 hours. Kermani Zireh Polois can be served for lunch, dinner.
It can also be eaten during Ramadan as Sahar – Iftar -.
